  1. You need 500 gms of yellowpumpkin,peeled and cubed.
  2. Prepare 1 large of onion ,sliced.
  3. You need 1 of tomato ,diced.

  5. It’s 2 tsp of ginger paste.
  6. You need 2 tsp of garlic paste.
  7. It’s 3/4 tsp of red chilli powder.
  8. You need 1/2 tsp of turmeric powder.
  9. Prepare 1tsp of cumin powder.
  10. It’s 1 tsp of coriander powder.
  11. Prepare 1/4 cup of water.
  12. It’s 2 tbsp of deep fried onion(birista) ,crushed.
  13. It’s to taste of salt.
  14. Prepare of Tamarind – jaggery water( mix together and keep aside).
  15. It’s 1.5 tbsp of tamarind paste.
  16. You need 3//4 tbsp of jaggery, grated.
  17. Prepare 1/2 cup of water.

  1. In a pan, heat oil and mustard seeds, when they start spluttering add the cumin seeds and all the tempering ingridients. Saute for 2 minutes..

  5. Add the pumpkin cubes and salt.Stir and cover.Cook on simmer until pumpkin is half cooked..
  6. Add the tamarind- jaggery water,crushed deep- fried onions and mix well..
  7. Cover and cook until the pumpkin is soft and cooked through. Check seasoning..
  8. Garnish with chopped coriander leaves..
  9. Serve hot along with Indian flatbread(rotis)..
